Dinner This Week

In my attempt to "clean out" the pantry, the refrigerator and the freezer this time around, I realized that I'm on week #12 of my challenge. Yikes - that sounds like there was a lot of food stashed away, but I really haven't been that good at only using what I have...we have gone on vacation, my husband travels for work so we have quick things, I got together with a few friends to cook in bulk, and we occasionally eat out. There actually have been a couple weeks that I didn't have to go to the store at all - mostly thanks to our CSA basket to help fill in the blanks of my menu planning.

So, this morning while viewing what is in the house, and going through recipes, I made sure to pick things that used up what we have, for the most part. I made my list, double checked a couple things, and went to the store. This is what I came up with for dinner this week:

Monday: Pizza (in Beatty, NV)


Tuesday: Tomato-Apricot Chicken & Bok Choy Salad

Wednesday: Winder Farms Ravioli with Pesto Sauce, Salad & a vegetable


Thursday: Tilapia Italiano, Rice & Salad

Friday: Chicken & Pasta in Peanut Sauce

Saturday: Left Overs or Steak, Baked Potato and Salad


Sunday: Chicken and Gnocchi w/ squash

I am happy that I've decided to stick with the weekly meal plans after last week's attempt to "fly by the seat of my pants". I was very happy, though, because last week was the second week that I did not have to walk inside a grocery store at all last week.
