Boy, it has been very busy around our household these past weeks. We've been all over! So, now that we're actually home for an entire week, I am bound and determined to make a meal plan for the week so that nothing goes to waste! Besides, I did go to Costco a few weeks ago to "stock up" on some things for the coming month. So, here's what is on our menu for this week:
Monday: Chicken Marsala with artichokes, mixed veggies & salad

Wednesday: Grilled Salmon and Cucumbers with Salad & Baked Potatoes (some sweet, some russet)

Thursday: Friday: Skirt Steak with Warm Bean Salad & Rice

Friday: Hummus with Veggies, Pitas and Chicken Koftas with Cucumbers and Yogurt & Zucchini Fries

Saturday: Out on the town with family - we'll be down on the strip for dinner & a show!
Sunday: Father's Day Supper BBQ

ReplyDeleteNo problem! We had take out on Monday, so everything is a day off. I think I'm going to skip the skirt steak this week, tho. I'm going to make that pan-fried chickpea salad tonight, Thursday, with the salmon...can't wait!
